The film opens with a small fishing boat silhouetted against the sky. Brief views follow of a chef in his kitchen followed by a view of a refrigerated delivery van belonging to the firm.
Over views of several fresh seafoods being cooked the commentary gives a brief promotional review of Ken Bell International. Brief views follow of packaged seafood and a meal being prepared using some of the KBI products. The commentary tells of how the company’s quality control processes ensure that the product reaches customers in top quality condition.
A map of the world shows where the seafood is sourced, the commentary says that the company buys from areas where sustainable fishing takes place. The imported seafood, which is peeled, packed and frozen at source is checked by the port health authority on arrival. A tray of prawns undergoes checking, a view follows of a laboratory which is involved in the quality control process.
A large, refrigerated van reverses to deliver imported seafood for processing at KBI’s factory thought to be at Jesmond in Newcastle. Views follow of seafood going through a steam cooking process. The items are frozen instantly using a special cryogenic freezing technique. Travelling along several conveyor belts, staff are on hand to remove any seafood which are sub-standard. The seafood is then packed into bags. The bags are labelled ‘Seahaven North Atlantic Cooked and Peeled Prawns’.
A team packs the bags of prawn into boxes ready for shipment. Other checks are made on colour quality of the product, glaze levels, correct count, overprint quality and taste. A member of staff wears a white coat with their name and a ‘Quality Control’ label. Microbiological tests are taken at an independent laboratory and a computer controlled system ensures traceability of consignments.
For higher hygiene quality above industry standard the film shows an entirely automatic system in action as prawns are processed. Another process involves seafood been placed into trays with bespoke outer packaging, these are packed into boxes for shipment.
A batch of langoustines are processed these can be delivered fresh or frozen. The film shows a team of staff processing the langoustines. The film follows the trays of seafood along a conveyor belt. Then there follows a view of the chef seen at the beginning of the film as he prepares a meal using the langoustines.
The film moves back to a control panel covered in buttons each one having a different function. At the top of this control desk is a sign which reads; ‘Ken Bell International Prawn Freezing Line’The commentary says the KBI processing plant operates 24 hours a day six days a week. The film shows seafood going through different cooking stages interspersed with numeric readouts from various gauges on the processing equipment. The seafood is then quick frozen as the commentary states that the processing plant turns out 250 tons of seafood each week.
The film briefly goes back to the chef and another seafood dish he’s preparing. The commentary goes on to say that KBI is always looking to innovate and introduce new products. To this end they have a test kitchen, this maybe the location where the chef is being filmed. More views show the chef busy with more seafood dishes. He serves up his preparations to a group of people sitting at a table nearby, which ends the film.
